Merry Christmas!

I'm pretty indifferent about Christmas, and the rest of the holidays. I mean I like them and all, but if we didn't have it, I don't think I would be too upset about it. Christmas music has been on the radio since the day after Thanksgiving. I made it a point not to listen to it until today. There's no reason for it.
We also decided this year that we weren't going to get a tree. We get a real one every year, if I'm going to do it, I'm going to do it right. But with the amount of hours that we are both putting in, we wouldn't have any time to enjoy it.
We're also in a very tight situation financially (who isn't)...and so we decided that we weren't going to be exchanging gifts this year, especially since my birthday is next Monday. Well, my husband decided to go out and buy me a laptop for a Chanukah present, I could kill him!! So once he did that, I knew that I was definitely going to have to get him something. I have my own personal savings account that he doesn't know about, and I had been saving up my extra money for the holidays. I started buying presents a few weeks ago, and I also bought a pre-lit little 3' tree. I knew the only way I would be able to do this without ruining the surprise was to do it tonight, Christmas Eve. I know I would never be able to wake up in the middle of the night to set everything up. So while he was playing video games, this is what I did:

I set up everything on the table, and then had him cover his eyes when he came into the room. I can't believe I pulled off a surprise!

I think I can

I am, by no means a baker or a chef. In fact, I try and stay out of the kitchen as much as possible. Any time I have ever attempted to create something, I would end up screwing it up. Case and Point: 1) I tried making brownies and forgot the sugar (yep, in the oven and everything!) 2) While peeling potatoes, I sliced my palm which required stitches 3) Wanted to prepare hot dogs in the microwave, and blew them up - not fun to clean up!!
So when it was voted that on the morning we were going to exchange Secret Santa gifts at work that we would each have to bring something we prepared for breakfast I flipped out. I decided I would make potato latkes, since I am the only Jewish associate at work, I figured, I would let everyone taste one of our traditional Chanukah foods.
I don't even own a food processor, I had to borrow one from Darrell's boss!

And voila!! They actually turned out REALLY good, and the best part: no one got sick!

Here's the recipe:
Ingredients
6 large baking potatoes
4 tbsp flour
1 onion
2 eggs
salt
pepper
vegetable oil

Instructions
1. Grate potatoes and onion in food processor.
2. Drain and soak up all liquid.
3. Mix grated potato mixture with flour, eggs, salt and pepper in a bowl.
4. Form potato mixture into small cakes.
5. Heat vegeatable oil in skillet.
6. Cook cakes until brown on the bottom. Turn and cook the other side.
7. Repeat for the remaining mixture.
8. Use paper towel to remove any excess oil.

Serve with applesauce or sour cream
Makes about 18 potato latkes

To move or not to move...

...that is the question.
We talked about moving back to Tampa pretty much since we came back down to South Florida at the end of April. I am just not happy with my job here, and we both miss it tremendously.

When I got turned down for the job I had interviewed for, we decided that maybe it was best that we just stay here. So I decided just to look for another job here. I landed an interview with Office Depot's Corporate Office, scheduled for this past Tuesday. Before I had to be there, my husband emails me a forwarded message from his previous boss in Tampa, asking him if he's absolutely certain that he's not going to go up there, because she has a position for him if he wants it. Well long story short, we end up toying with the decision again of whether or not we should move back or not. If we moved it meant we would be financially strapped until I can find a decent job, but we would be soooooo much happier. If we stayed, we'd have the money, mind you only because we're both pulling 70-75 hours each per week, but definitely not as happy. So for 2 days we discussed it, I got some wonderful advice from my Nestie "friends", and we decided that we were going to move. I'm already counting down the days....61.....February 15 will be our last day in this place...
